Spareribs with Secret Chinese Barbecue Sauce Ingredients: 3 pounds spareribs 5 tablespoons hoisin sauce 3 tablespoons plum sauce 2 tablespoons oyster sauce 2 tablespoons dark soy sauce 2 tablespoons honey 1 tablespoon dry sherry 1 tablespoons peanut oil 1 teaspoon Chinese chili sauce 1/2 teaspoon five-spice powder 1 tablespoon finely minced garlic 1 tablespoons finely minced ginger

Directions: 1. Trim cartilage and bone from spareribs. Cut off the flap of meat on underside of ribs. Also remove tough, white membrane from the underside. 2. Preheat oven to 350 degrees Fahrenheit. Line a large baking pan with foil. Coat a wire rack with cooking spray, then place rack in baking pan. 3. Combine ingredients for barbecue sauce. Rub spareribs on both sides with barbecue sauce, and place on the rack, meat side up. 4. Bake until meat begins to shrink away from the ends of the bones, about one hour. Cut into individual ribs. Fettuccine alla Genovese Ingredients: 1 1/2 cups heavy cream 4 cups spinach leaves, rinsed, drained and cut into strips 1/2 cups golden or dark raisins 1 teaspoon grated lemon zest 1/2 cup pine nuts Salt and freshly ground pepper 6 to 8 ounces fresh fettuccine

Directions: 1.Heat a large pot of salted water to boiling for the pasta 2. Heat the cream in a large skillet over medium heat to simmering. Add the spinach and cook, stirring constantly, until just beginning to wilt. Stir in raisins, lemon zest and juice, a few pine nuts and salt and pepper to taste. Cook, stirring constantly, until slightly thickened. 3. Add pasta to boiling water and cook until tender, about two minutes for thin pasta. Drain the pasta and transfer to a pasta bowl. Add the sauce and quickly toss to combine. Top with the remaining pine nuts and serve hot. Source: The Mediterranean Kitchen by Joyce Goldstein.

Granita de Caffee con Panna Ingredients for the Granita: 3 cups strong hot brewed espresso 1/2 cup (or to taste) sugar Ingredients for the Cream: 1 1/2 cup heavy cream 3 tablespoons sugar 2 teaspoons ground cinnamon or 3 tablespoons Frangelico liqueur

1. For the granita, stir the espresso and sugar until the sugar dissolves. 2. Pour into a shallow metal pan or 2 metal ice cube trays without dividers. 3. Cover and freeze until ice crystals begin to form, 2 to 3 hours. Whisk with a fork to break the ice crystals and return to freezer. 4. Repeat this process every half hour until the granita is the consistency of a crunch slush, 2 to 3 hours.

For the cream, beat all ingredients together until soft peaks form. Serve the granita garnished with the whipped cream. Source: The Mediterranean Kitchen, by Joyce Goldstein.

Castagne al Marsala (Montone) Ingredients: 1 pound chestnuts 3 wine glasses Marsala 1 wine glass red wine 3 tablespoons sugar Cream Marsala or rum (optional)

Method: 1. Score the chestnuts with a sharp knife. Place them in a baking tin in a moderate oven for about 15 minutes.

2. While chestnuts are still hot (but not red-hot - no need to blister your fingers!) peel off the shells and inner skin. Try to keep the chestnuts whole.

3. Place the chestnuts in a pan and cover with the Marsala, wine and sugar. Simmer gently until they are tender and the wine has turned to a thick syrup.

4. Serve hot or cold with the cream, to which rum or Marsala may be added, if you wish. Serves 4 Source: Italian Food by Elizabeth David. Publisher: Barrie & Jenkins 1987.

It seems like its been more than a year since you have claimed on your website to be manufacturing a motor for your pasta maker, but still it does not appear for sale on your Internet site. You are still recommending that customers, in the meantime, rig up something using the Imperia motor. When do you expect to have available for sale a motor specifically designed for your machine?

Dear Trattorina Sales, I found you r website and am very interested in some of the Moroccan Tea Glasses. The is one style (the middle picture I think) that is not tapered at the bottom. I have been given a used but never used Pasta Perfetto and am excited to try some receipes. I am NOT suppose to eat white flour however and wanted to try making wheat pastas. I purchased a Trattorina pasta machine about 2 months ago. During my Holiday cooking I attemped to use my new pasta machine on 4 diffrent projects. Every time I have tried to use the machine, I get metal shavings and some type of a black particals in my dough ( it look like a dry lubricant). After my first attempt where my dough was ruined, I made a couple of scrap batchs of dough to run through and break in the machine. I thought the machine was ready, but I have tried it twice since then and both times I end up using my rolling pin to do the project. Is there any way to stop this? Have you had this type of complaint before? I am unhappy with this product at this point.
