Making the Tea

3 teaspoons green tea
water - boiling
13 - 20 sugar cubes
fresh mint sprigs
YOU WILL ALSO NEED:
Sinya: A tray on three legs, made of brass or electroplate, on which are placed the tea glasses and teapot.
Glasses: Small and squat, either of crystal or ordinary glass.
Mekraj: The kettle for boiling the water, or a 'samovar' beautifully chased in brass electroplate.
A smaller tray and three cylindrical boxes in which to keep the tea, sugar and mint. The tray and boxes should be made of the same material

1 Rinse teapot with 750 mL hot water. Place green tea in pot. Pour over a little boiling water. Strain off water. Reserve tea in pot.

2 Add sugar cubes to taste - usually 13 cubes for a medium-sized pot or 20 cubes for a large pot. Pour in boiling water to half fill the pot. Add fresh mint sprigs. Steep for a moment. Serve in the glasses.
